On a recent weekend, my fabulous girlfriends and I got together at my friend Sofya’s for a homemade brunch. I wasn’t originally planning to write about it but I really wanted to share these photos and hoped these easy brunch recipes would inspire you to have brunch gatherings of your own. Good food and day drinking - what’s not to love?
For the menu, we wanted to make a variation of eggs, a protein and a fun vegetable, and to serve it family-style as to not fuss with plating individual dishes.
A frittata is the perfect way to make eggs for a crowd since it requires very little effort. You just have to assemble it, pop it in the oven and boom, you’re done. We made a potato and caramelized onion version (similar to this one).
For the protein, we went with a balsamic-rosemary grilled skirt steak, which is always a crowd-pleaser, and easy on the wallet, too.
As for the vegetable, we went the super simple route with this grilled lemon-garlic asparagus with Parmesan cheese. And don’t forget, for casual brunch or dinner parties, it’s important to always serve little snacks or finger foods that don’t require any cooking so people can munch on them before and after the meal. We bought a few cheeses, some fun crackers, crusty baguettes and grape tomatoes.
To drink, we had peach mimosas, which are fail-proof, and coconut margaritas, which turned out to be kind of a disaster. Note to self: Do not get three girls to collectively scale up a recipe to make a pitcher of margaritas instead of two glasses. But it’s alright - we’ll know better for next time.
Instead of plain old water, we cold-brewed Tazo passion fruit tea - just steep a Tazo teabag in cold water for five minutes and you’re done.
And for dessert, my best brownies ever.
